An alternative for days when there is no time to make bread with yeast. Here in the US, it is very famous as Irish bread or bread made with baking soda. It does not have the complexity of flavors of a bread made with pre-ferment and yeast, but it is easy and the smell of bread baking is always very appreciated at least in our house. You can bake in different molds, the times will vary according to the mold they use. The gringo versions are usually quite sweet, so in this recipe, I decreased the sugar.

Soda bread, a quick bread
for a round loaf of 20 cm in diameter
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 2 tablespoons sugar
- 1 teaspoon salt
- 3 tablespoons butter cut into small pieces
- 1 pot of natural yogurt (170 grams)
- 1/4 to 1/2 cup milk
- 2/3 cup raisins, optional
Preparation:
- Preheat oven to 190C or 375F.
- In a bowl combine the flour, baking powder, baking soda, sugar, and salt, stirring with a fork, mixing well. Important, do not skip this step.
- Add the butter and rub with your fingers tips until butter crumbs form.
- Add the yogurt and mix well with a fork.
- Add milk slowly, the amount necessary to form a dough.
- Add raisins and mix if using.
- Place in a buttered springform pan or a pound cake pan.
- Bake for 40-50 minutes, or until golden and bury a stick comes out clean.
- Let stand 10 minutes in the pan, unmold, let cool on a rack.
- Serve warm.
- This bread is meant to be enjoyed the same day is baked.
