This Ponche a la Romana or Pineapple Sorbet Champagne Float is a must for the holidays in my family. We always toast with this drink in hand for Christmas and New Year. The truth is this doesn’t need a recipe. It is only pineapple ice cream. In Chile is generally sorbet or sherbet. Serve in frosted glasses, fill with champagne, and serve immediately.
For children, a version with Sprite or Canada Dry is made. You can also add fresh pineapple or from a can (crushed pineapple), but I prefer one with just ice cream.
Here in the US, the HEB brand in Texas has a delicious pineapple sorbet, or else I buy Haagen Dazs pineapple and coconut. It tastes like PiƱa Colada, tasty and fun to drink.
An ice cream cocktail makes sense for New Year in Chile since it is summer there. Also, during the “80s, many families got a box of groceries at the end of the year, provided by the factory owners or bosses, and many champagnes or other bubbly wines were included.
