Everything improves with Dulce de Leche. It’s the magical flavor of my childhood growing up in Chile. One of my favorite snacks was a Dulce de Leche sandwich. We have them so frequently it is genuinely the PB & Jelly equivalent. This Dulce de Leche Rice Pudding proves this idea right again. Creamy and with an unparalleled sweetness and richness, it’s a genuinely comforting dessert. You can enjoy it warm in winter and cold during the summer.

A delicious twist on the beloved rice pudding.

Ingredients
Units
- 1 cup of water
- 2 cinnamon sticks
- 1 cup white rice (you can use quick ones)
- 4 cups 2% milk
- 1 can (380 grams or 13.4 oz.) of Dulce de Leche (available in Latino markets or the International aisle)
- 1 tablespoon butter
- salt
Instructions
- Cook the rice following the instructions on the box, use a cinnamon stick in the cooking water and a pinch of salt.
- Place the milk and Dulce de Leche in a saucepan and heat over medium-high heat, stirring to dissolve the Dulce de Leche.
- Add the cooked rice and continue to cook over medium-low heat for 20-30 minutes, stirring frequently.
- Be careful. When the milk reaches the boiling state, it produces a lot of foam. Reduce the heat to a simmer.
- Wait until you reach the desired thickness. In my case, it took 24 minutes. Add the butter and turn off the heat.
- Remember: it will thicken when cold!
- Serve cold or warm with chocolate sprinkles, raisins, or just by itself.

I might need a NEW favorite dish after seeing what you made! YUM!! Currently, my favorite dish with rice is cheesy rice with BBQ chicken! 🙂 But I also love just a big bowl of rice with some sale & butter 🙂

Let me first say that your dish looks amazing! Until I saw your recipe my favorite rice dish was shrimp stir-fry with a bit of heat. My wife doesn’t like hers hot so I just add the peppers and Sriracha to my bowl.
As a runner I always crave carbohydrates and rice has always been near the top of my list of choices. I may have to start incorporating it into my nightly snack time!
