- 1 tray of mushrooms or 2 cups sliced mushrooms
- 6 chicken thighs or drumsticks with skin
- 1 medium onion diced small
- 1 cup white wine
- 1 tablespoon butter
- 1 tablespoon oil
- 1 dried bay leaf
- salt and pepper
- chopped parsley to garnish
Instructions
- Heat the butter and oil over medium heat in a wide pan or pot. Add the mushrooms and saute occasionally, stirring for 3 minutes. Remove to a plate.
- Add the onion and cook, stirring for 5 minutes. Meanwhile, pat the chicken dry using a paper towel and generously season with salt and pepper on both sides.
- Increase the heat to medium-high. Add the chicken and sear for 3-5 minutes per side.
- Add white wine and bay leaf. Lower heat to medium, cover. Cook for 15 minutes.
- Uncover, add the mushrooms and chopped parsley. Serve warm.
