Beet Hummus

Ingredients:
- 3 cooked and peeled beets, cold
- 2/3 cup cooked chickpeas
- 2 cloves garlic, finely chopped
- 6 tablespoons tahini (sesame paste in supermarkets)
- juice of 1/2 lemon
- salt
- splash of balsamic vinegar
Preparation:
- Place everything in the food processor and process until smooth and homogeneous.
- Test, adjust the seasoning.
- Serve with vegetable sticks or crackers or pita chips.

The recipe is indeed fantastic. The original recipe though called for 12 oz. beets, 1/4 cup lemon juice, pinch of cayenne pepper and pomegranate molasses (which makes the recipe).
