Israeli Couscous Salad with Black Beans and Mango
for 2 people
Ingredients:
- 115 grams couscous
- 1/2 mango cubed
- 1/2 cup of cooked black beans or from a can, rinse and drain
- 5 scallions chopped fine
- 1/4 orange/red pepper cut into small cubes
- salt, pepper, white wine vinegar, olive oil
Preparation:
- Cook the couscous according to the instructions on the box. Meanwhile wash and chop the mango, scallions, and pepper.
- In a bowl mix all ingredients and season with salt, pepper, white wine vinegar and olive oil to taste.
