Using a quick Thai-inspired peanut sauce I made this last minute Pad Thai. The dish was excellent with a complex flavor and very nice texture. You can also use this sauce on chicken on skewers ( double this recipe and use half to marinate the chicken 2 hours before grilling, refrigerated) or to dip spring rolls Vietnamese style.

Quick Thai Peanut Sauce
for 1 cup
Ingredients:
- 3 tablespoons peanut butter or 1/2 cup roasted peanuts
- juice of 1/2 lemon
- basil or cilantro, roughly 10 leaves
- coconut water or water
- 1/4 seedless chile pepper, I used jalapeño
- a piece of 1 cm. minced ginger or 1/2 teaspoon ground ginger
- 1 teaspoon soy sauce
serving suggestion:
- chopped peanuts
- 1/2 cucumber cut into sticks
- 1 carrot, cut into sticks
- noodles or other noodles, I use already cooked ramen
Preparation:
Place all ingredients for the sauce in a blender and process until desired consistency. Taste and adjust the seasoning.
To serve mix with the noodles and add the vegetables. Sprinkle with peanuts and chopped cilantro or basil.
